My mum said to me the other day that sometimes its all about making your life a little easier. I am a big advocate for cake and pastry mixes, the only ingredients you tend to need are eggs and water. I spotted this chocolate brownie mix at Lidl and wanted to give it a try. The instructions are simple enough to follow on thé back of the box, preheat the oven, grease some baking paper and line the tin.
This mix has chocolate chips, but the kids wanted some extra crunch so crumbled some Whittard butter strawberry shortbread biscuits into the batter mix after stirring in the egg, water and oil. Cook in the centre of the oven for around twenty minutes, and leave to cool. We added chocolate crisp balls on the top, as if we didn’t already have enough chocolate. So delicious, with just enough rise.
